The headmaster of Fleurir Confectionery Academy is strict and uptight. She closely monitors Sayuri because she resembles the struggles that the headmaster faced as a student who received a scholarship to attend a renowned confectionery academy in France. Her mentor was Gilberts grandmother, and this reminds her of her own past experiences. The headmaster is also a regular customer at Lecran pastry shop, where one of her teachers, Aoi, manages the establishment.
